The other day I came across this presentation I made some years ago (2018) in Lisbon at one of the KiC Climate Change meetings LINK, to try and get the participants interested in food fermentation as a sustainable healthy practice with large ramifications.
The presentation introduced a project to educate people about fermented food and to create community around learning fermentation techniques, growing vegetables to ferment them, and things like that.
The project was called Probiotic Gardens, I still think it’s a good idea, and I for one would love to see one in my area. Who knows, maybe one day.
